In my opinion, this is the best handy kitchen reference around. It is clearly written, covers all the basics, nicely illustrated, and well indexed. It has great charts such as "emergency substitutions," "meat roasting time and temperature chart," and many, many useful tips and tidbits. This does not cover alternative cooking and baking techniques for food allergies. My version is spiral bound, making it easy to flip open and keep a page open for reference but also durable.
